Back in School: Vegetarian Lunch Ideas part two



Since I had find so many vegetarian lunch ideas I deiced to write a part two.


Pasta Salad
(Cook the pasta the night before and prepare the rest in the morning.)


I wrote a post on this recipe not to long ago, and it really is the perfect light-weight meal. You can also substitute it with noddles if you like.

Chickpea Sandwich



I have not actually tried this recipe out, but it sure does look good.

Protein Packed Grilled Cheese 
I could not help myself, but what would an article on lunch ideas be without grilled cheese? This is another recipe I picked up from "Double Delicious by Jessica Seinfeld."

Tomato Soup with Pasta and Kidney Beans
(Make the pasta the night before.)


  1. Boil a can of Campbell or any type of tomato soup. 
  2. Throw in the canned kidney beans (use canned kidney beans so that it will cook faster.) 
  3. Lastly add the pasta in.




Vegetable Fried Rice
(Cook the night before.)

Perfect for the rice lovers out there. 






Egg Salad Sandwich

  1. Toast two slices of whole wheat bread.
  2. Hard boil an egg.
  3. Remove the shell from the egg and break apart the egg into small pieces.
  4. Add a good amount of mayo and mix it with the egg.
  5. Add the mixture onto the toast. You can then add lettuce if you like.
