Back in School: Vegetarian Lunch Ideas part one


During my short lived days as a vegetarian, the hardest part was coming up with healthy school lunch ideas. I would have to spent hours every night searching up different options besides grilled cheese. Hopefully this article will help those out there who need some new fresh ideas when it comes to lunch.

Baked Potato Cubes
(Cook the night before)


This meal can easily double as dinner and lunch the next day. The cafeteria at my school serves this and it tastes delicious with ketchup.

Salad Wrap


This easy recipe was spotted in the September issue of Seventeen magazine.

  1. Heat up a couple whole wheat tortillas
  2. Spread cream cheese onto the tortillas
  3. add what every vegetables you want
Carrots, cucumber, and peppers work. You can even add eggs or beans to your wrap.






Pasta with Pea Pesto
(Cook the night before)
I came across this recipe while reading "Double Delicious by Jessica Seinfeld." This recipe includes chicken but all you have to do is remove it form the recipe if you want a vegetarian meal.

Pita Chips with Hummus and Veggie Dippers


This recipe is very easy, and packed with nutrition. You can choose to buy already made pita chips and hummus, or you can make your own.

  1. Blend together chick peas and salt in a blender or a chopper until smooth.
If this meal is not filling enough for lunch bring along mini veggies and ranch dressing.

Banana and Peanut Butter Sandwich
 
A new twist on peanut butter and jelly for those with a sweet tooth. 
  1. Lightly toast two slices of bread. (preferably whole wheat)
  2. Cover the toast with peanut butter
  3. Add a couple of bananas on top
  4. Optional: drizzle a bit on honey on top


Bagel Pizza
An easier and cuter way to make a pizza.
  1. Toast your Bagel
  2. Coat the bagel with cheese and any other pizza topping your prefer. (pineapple, veggies)
